News from Castle Glen

Winter is upon us - well and truly - experiencing heavy frosts with -2 morning temps.

We now move into pruning time in the vineyard getting the vines ready for their big sleep - hopefully it will be a long one - so production next year will be bountiful.

Well it was definitely another successful year for us at the Australian Distilled Spirits Awards. Taking home a total of 9 medals and narrowly missing out on the Grand Champion and Gold medal for our handmade Aromatic Bitters which took Silver in its class.

The medal tally for this year is as follows :

Aromatic Bitters - Silver Medal, Peppermint (40%) - Silver Medal, Silver Knight Schnapps Liqueur (35%) - Silver Medal, Hazelnut Liqueur - Silver Medal, Yellow Strega (40%) - Bronze Medal, AWC Single Malt Wheat Whiskey - Bronze Medal, Butterscotch Liqueur - Bronze Medal, Orange Brandy - Bronze Medal, Tia-Marica Liqueur - Bronze Medal.

An interesting mix of Castle Glen Spirits and Liqueurs taking out medals this year. In three years of showing - since 2015, we have now won 21 medals for our liqueurs and spirits including two Gold and two Grand Champion Awards. Castle Glen has certainly, firmly cemented its position as one of the top distilleries in Australia with our award winning, handmade, all natural products.

Hazelnut Liqueur - Silver Medal (ADA) 2017

Hazelnut Liqueur - Award Winning Hazelnut Liqueur - Silver Medal (ADA) 2017. Castle Glen's Hazelnut Liqueur is created using roasted hazelnuts.

The Hazelnut Liqueur is matured into a rich pungent, sweet, nutty liqueur with tones of vanilla. This liqueur can be described as luxurious, extremely flavourful and soft on the palate with mild sweetness - exotic, pure and intense.

Serve straight or on the rocks or add to a favourite cocktail like we have - Hazelnut Espresso Martini.

Tia Marica Liqueur - Bronze Medal (ADA) 2017

Tia Marica Liqueur - Award Winning Tia Marica Liqueur - Bronze Medal (ADA) 2017. Castle Glen's Tia Marica Liqueur is created using only the finest double roasted arabica coffee beans with high quality Australian cane spirit giving this rich liqueur a timeless allure as only coffee can.

The aging process of the coffee liqueur creates a luxurious smooth feel on the palette. Castle Glen's Tia Marica Liqueur - Bronze Medal (ADA) 2017 can be enjoyed straight, on the rocks, in your coffee or added to a favourite cocktail - See Hazelnut Espresso Martini.

Below is our new featured Hazelnut Espresso Martini.

Hazelnut Espresso Martini

Ingredients

60ml Tia Marica Liqueur - Bronze Medal (ADA) 2017
30ml Hazelnut Liqueur - Silver Medal (ADA) 2017
150ml Almond Milk

Method

Simply add all ingredients to a shaker with ice. Shake well and strain into a martini glass.

A delicious take on a classic, with a rich full flavour and long lingering finish. This version is also all natural, gluten free and vegan!

Rum, Coffee & Hazelnut Sundaes
Choc Hazelnut and Coffee Friands

Ingredients

1 ½ cups icing sugar
1 cup hazelnut meal
½ cup plain flour - sifted
¼ cup cocoa powder
1 tablespoon coffee beans
150 gm butter - melted
6 egg whites - lightly whisked
1 tbsp Hazelnut Liqueur - Silver Medal (ADA) 2017
1 tbsp Tia Marica Liqueur - Bronze Medal (ADA) 2017
icing sugar to serve

Method

1. Sift Icing Sugar into a bowl. Add hazelnut meal, plain flour and cocoa powder (sifted).

2. Preheat oven to 200C/180C Fanforced.

3. Grease a 12 hole, ½ cup capacity friend pan.

4. Melt butter in microwave or saucepan.

5. Make a well in the centre of the dry ingredients (hazelnut meal, flour and cocoa powder).

6. Add egg whites and butter (melted). Add the award winning Hazelnut Liqueur and Tia Marica Liqueurs.

7. Spoon prepared mixture into a prepared pan. Top each with 3 - 4 coffee beans. Press lightly to secure.

8. Bake 15 to 20 minutes or until a skewer inserted in the centre of 1 friand comes out clean.

9. Stand in pan for 5 minutes. Transfer to a wire rack to cool. Dust with icing sugar and serve.

Serving Options

Serve with Greek Yoghurt (dollop) or serve with whipped cream with a touch (1 tsp) of Castle Glen Hazelnut Liqueur added.

News from Castle Glen Vineyard - Winter

Winter is here - temperatures have cooled and jack frost is making a regular appearance. Crunchy underfoot in the mornings and a white as white vista across the vines and the paddocks. The locals (older been here forever locals) are talking snow this winter - we will just have to see - join us on Facebook for up to date weather event news.

Wines

White:
1999 Semillon Dessert Wine is still available. This was a special release dessert wine using 100% Semillon Grapes. A small block of the Semillon from 1999 achieved extraordinarily high sugar levels through the late harvest and berry shrivel. Being aged in American Oak accentuates the vanilla and the creamy texture in this unusually styled dessert wine.

Fortified Wine

We have released a Semillon Fortress - “its fortified” - Vintage 2001 - this is a white fortified wine.

Only selectively handpicked Semillon grapes from Castle Glen Vineyard have been used in this preservative free vintage fortified wine. Fortified with 2 year old brandy and aged in an American Oak Barrel has encouraged a rich sweetness with intensity and concentration of the sweet Semillon grapes developed over 16 years of barrel aging. Bottled in 700ml Castle Glen Bottle - $25.00

Try our Chocolate Fortress - “its fortified” made from Semillon grapes this winter. This rich and smooth chocolate fortified has been matured with a Castle Glen Chocolate Brandy for 4 years allowing the chocolate, caramel and vanilla characters to evolve and continue to mature in the bottle. Makes a great alternative to a dessert. Alc/vol - 18%. Bottled in 375ml - $12.00 and 750ml - $22.00.

All Castle Glen fortifieds are racked off the barrel (unfiltered) ensuring ongoing maturation in the bottle. They are a true Vintage Fortified made with hand-picked Castle Glen grapes

Beer and Cider News - New Releases

Beer:
Granite Ale - English Ale - Belgian Style. Sour Plum with flavours resembling pruns and raisins. Dry hopped. Bottle fermented for natural gas. Bottle aged. Drink chilled - 5.4% alc/vol

Ginger Brew
Another batch of the famous Castle Glen Ginger Brew has been released. With its trademark ginger spice and soft bubbles this is a great winter warmer round the camp fire.

Alc/vol: 8.8% - 500ml - $10.00 each and 1.5L Magnum - $35.00 - great alternative for when friends drop by.

Aromatic Bitters - Silver Medal (ADA) 2017 is back on the shelf. A great alternative to Angostura Bitters. Add to any cocktail or line a glass and add lime and soda water for a thirst quenching drink. Remember this product is alcoholic - 40%!

Cellar Door News

The Cellar Door has been busy already this winter - with school holidays upon us and the Snowflake in Stanthorpe Festival drawing the crowds for a winter wonderland experience.

Cedric has been busy making fudge and brittle - trying to keep up is turning into a full-time job. For lovers of Musk the Musk Stick Fudge is back and also a Musk Stick/Coconut Version - Coconut Ice! Caramel Fudge is hard to keep on the shelf - it is special with molasses and cinnamon an old family recipe - very close to Russian Fudge.

Montville News

Winter is in full swing up here in Montville, a perfect time of year to enjoy one of our 15 different varieties of fortified wines! Whether you're a traditional lover of Tawny, enjoy the unique intensity of Muscat, or more of a cheeky Chocolate fortified, our “Fortress - it's Fortified” range will please even the most discerning connoisseur. (We even have Hot Chilli Fortified for those who dare!)

Our shop is fully stocked up on all your favourites - including the delicious Dark Chocolate and Chocolate Creme Liqueur varieties which are always popular this time of year. Mt Tamborine News - The Building of the Castle

It's been quite an interesting few months after cyclone Debbie with access to the mountain being a more difficult than usual. We've still been super busy here with lots of happy customers enjoying the sunny days on the mountain.

You will notice the poinsettias in full flower at the moment adding lovely splashes of colour to the gardens. The ginger is coming along well and will be ready to use in some of our delicious products very soon. Nothing like fresh home grown produce.

Buckin Cowboy

We are really loving the chilli products up here, plenty to choose from! Try blending Choc-Chilli Creme with our Tia Marica 50/50 as a shooter. It will certainly warm you up!
