Quick Mix Steamed Christmas Pudding



  • 1 ½ cups (240gm) sultanas
  • 1 ½ cups (225gm) currants
  • 1 ½ cups (250gm) raisins
  • ¾ cup (125gm) mixed peel
  • 2 ¼ cups (450gm) firmly packed brown sugar
  • 1 tablespoon grated lemon rind
  • ¼ cup (60ml) Queensland Delight Liqueur or Whiskello Liqueur
  • 3 eggs, lightly beaten
  • ½ cup (75g) plain flour
  • 1 tablespoon mixed spice
  • 4 cups (280gm) stale breadcrumbs
  • 185gm butter
  • Extra Queensland Delight Liqueur or Whiskello Liqueur, to pour over cooked pudding.

Combine all ingredients in a large bowl and mix well.

Method to Steam Pudding:

  1. Grease 2.25 litre (9 cup) pudding steamer. Line base with baking paper.
  2. Spoon mixture into prepared steamer.
  3. Place a 30cm x 40cm sheet of foil on bench, top with a sheet of baking paper.
  4. Fold a 5 cm pleat crossways through centre of both sheets.
  5. Place paper sheets, baking paper side down over steamer, secure firmly with string or a lid.
  6. Crush surplus foil and baking paper firmly around rim to help form a good seal.
  7. Place pudding in a large boiler with enough boiling water to come halfway up the side of the steamer.
  8. Cover boiler with a tightly-fitting lid.
  9. Boil 6 hours. Replenish with boiling water as necessary.
  10. Pour extra Queenland Delight or Whiskello over pudding when cooked.
  11. Stand pudding for 15 minutes before turning out.
  12. Serve with Maidens Dream Whip.

Maiden's Dream Whip


  • 125gm butter, softened
  • ½ cup (80gm) icing sugar mixture
  • 2 tablespoons Maidens Dream Liqueur


  1. Beat butter with electric mixer until light and fluffy.
  2. Gradually add sifted icing sugar mixture.
  3. Beat well until smooth.
  4. Add Maidens Dream Liqueur, beat until combined.
  5. Serve over Steamed Christmas pudding with Queensland Delight or Whiskello.
